Lifestyle Changes

Since the creation of this blog, it has mostly been about yummy food and most of it wasn't they healthy type of food. Back in February I decided to make a change in my diet. I am trying to stick with foods that either came from an animal or from the ground and eat less processed foods. On weekends those rules go out the window, but even when I splurge, I find myself making better choices. The staples of my diet have changed drastically. There are always fresh vegetables, fruits, Chobani Greek Yogurt, and cottage cheese on hand. I have also been tracking everything I eat on the Daily Plate at www.livestrong.com which helps me make good choices and helps me be accountable for what I am eating. The benefits are a slight weight loss and just plain feeling better. I have always thought about food non-stop, but now I am thinking about it in a completely different way. I am planning ahead and being creative with my cooking. Here are a few meals I have cooked up. I am really going to miss all of this fresh produce when the weather turns.

These vegetables turned into an awesome stir-fry with brown rice, chicken, and toasted almonds.



I also make this meal on a regular basis. Spinach omelet with homemade salsa and avocado.


Whole wheat pasta salad with asparagus, spinach, zucchini, onion and feta with a green goddess dressing.

There have also been many salads eaten in the last couple of months. With all the fresh veggies I have been finding at the Farmer's Market, we can have salad every night and they can taste different every night. I have learned that salad does not equal healthy. Most of the salads you get at a restaurant are so high in calories that you are better off eating a greasy burger.
